Spicy Cucumber Noodle Salad

This spicy cucumber salad is packed with flavor and ready in minutes! It’s the perfect summer side dish or a base recipe to add a boost of protein like edamame, grilled chicken, or teriyaki salmon.


Spicy cucumber noodle salad

Ingredients

1 small English cucumber, thinly sliced

1 cake Lotus Foods Ramen, cooked and cooled *(don’t overcook)!*

2 tbsp smooth peanut butter

2 tbsp soy sauce (or tamari)

1 tbsp crispy chili oil

1 garlic clove, finely grated or minced

1 tsp toasted sesame oil

1 tsp rice vinegar

1 tsp toasted sesame seeds

1 tbsp chopped scallions

1/2 juiced lime


Instructions:

  1. In a large bowl, whisk together everything *except* the noodles and cucumber.

  2. Add cooked noodles and toss to coat in that creamy, spicy sauce.

  3. Fold in cucumbers, top with extra chili oil + scallions
